Ingredients – 1/2 cup besan, 1 cup soya chunks, 1 onion, 2 dried red chillies, 1 inch ginger, 7-8 garlic cloves, 2 bay leaves, 2 tbsp desi ghee, 1 tsp cumin powder, 1.5 tsp garam masala, 1 tsp black pepper powder, 3 green cardamom, 1/2 tsp turmeric powder, 1 tbsp Salt, 1 cup water, 1 tsp kewra water, 1 bread slice crumbs, and 1 tsp kashmiri red chilli powder.

Method – Add soya granules or chunks to 3 cups of hot water. If you use a pressure cooker for steaming veggies like me, you can just use up the hot water used for steaming. Drain them and squeeze off the water. Rinse twice in fresh cold water and squeeze off the excess water. If using chunks then you will need to pulse them a few times to get a coarse texture. Add salt, garam masala, coriander powder, chilli powder and pepper powder. Mix up all these well. Dry roast besan / chickpea flour until it begins to smell good. Add it here. Do not use unroasted or raw flour. Mix up everything again. Divide the mixture to equal parts. Heat your grill pan with 1 tbsp oil greased and Place them on the hot pan. Grill, while rotating the sticks every 7 to 8 mins. If doing on stove top keep the flame to medium.
